Chef'sChoice Model 316 is a two-stage electric sharpener built specifically around thin 15° edges. Fine diamond abrasive in the first stage hones the bevel; ultra-fine diamond in the second polishes it, with left and right slots separated so contemporary double-bevel and selected traditional single-bevel Asian knives can be treated appropriately. It is a much more precise proposition than a generic pull-through and should be sold as a specialist 15° machine, not a universal sharpener.
