The Masahiro 24cm Bread Knife is a high-performance knife that combines lightweight and high quality. The knife is beautifully balanced with an excellent cutting performance made possible by a three-stage quenching, sub-zero treating, and tempering process. The blade is made from 440 stainless steel, which has been treated by three stages of quenching, sub-zero treating, and tempering until the steel reaches a hardness of 58-60 HRC.
