Kai Shun Combination Whetstone 1000/4000 Grit

This Kai Shun combination stone pairs a 1000 grit sharpening face with a 4000 grit polishing face, so one stone can take a dull-but-sound edge from restoration to refinement.

The 1000 side does the useful metal removal; the 4000 side smooths and polishes the bevel for the cleaner feel expected from Shun’s hard Japanese blades. Kai recommends soaking the stone and gives approximately 15° as the working angle for double-bevel knives.
